Spicing Up Leftovers

Screen Shot 2013-12-09 at 12.38.34 PMCooking is an integral part of RV traveling whether it’s on the grill, on the stove, or over a campfire. One of the results of cooking is having leftovers. This is good for the next day, but what happens if you have something that produces leftovers for a couple of days? The answer to that is finding innovative recipes to spice it up so it’s an exciting new meal.

Baked Sausage and Pepper Ziti

If you’ve prepared Italian sausage for dinner and have several links left over, this recipe will stick to your ribs.

Preheat oven to 400 degrees.
Cook an 8 ounce package of ziti pasta per cooking instructions.
Slice leftover sweet or spicy Italian sausages into 1/4-inch slices. (4 links, or 12 ounces)
In a separate pan, heat 2 tsps. of oil over medium heat. Add a medium sized onion and 1 red bell pepper, chopped. Add 2 chopped cubanelle peppers and the Italian sausage.
In a large bowl, mix 1 cup mozzarella, 1 cup ricotta, 1/4 cup each parsley and Parmesan.
Drain pasta. Add the cheese mixture, sausage, and 1 cup of marinara sauce. Blend thoroughly.
Pour mixture into a shallow baking dish and top with 1 cup of marinara sauce. Top with 1/2 cup mozzarella and Parmesan.
Bake for 20 minutes, uncovered. Serves 6.
Salisbury Steak

Use leftover hamburgers in this easy recipe.

Flour each side of 4 hamburger patties. Place in a skillet with butter and brown both sides. Drain.
Add 1 cup beef broth, 1 sliced onion, 1 small package of fresh, cleaned and sliced mushrooms, and 1 tbsp. Worcestershire sauce.
Stir the mixture and coat the hamburgers with the sauce.
Simmer for 25 minutes, covered.
Serve with mashed potatoes.
